Q; What is a black cake or dark fruit cake?
A: A black cake is a cake that is made lovingly with sweet spices and fruits that have been soaking in a variety of alcohol (rum, red wine, brandy, sherry, port) for a long period of time. A Jamaican black cake must have Jamaican rum and wine and it should be dark in color. Then that fruit mix is added to a prepared (from scratch) cake batter with darkening such as burnt sugar or molasses to give it a dark or black color. Some people like to leave whole cherries and raisins in their cake to give it some bite. Most people however, prefer their black cake to be smooth and refined. The cake should be very moist and flavorful. You can eat it with royal icing or a rum-vanilla glaze to add a little sweetness as this cake is not too sweet on it's own. Black cakes are usually eaten at the most special of events like weddings or birthdays. You could give it to someone as a gift at Holiday time as well.
