The 32 oz. fruit mix contains 4 cups of fruit. That can make two 8 inch cakes or one 10 inch or 12 inch cake depending on your black cake recipe. You can choose the 64 oz. or half gallon fruit mix to make many more delicious homemade black cakes. This mix has been soaking for at least 5 months but you can always buy it and store it in a cool dry area until you are ready to get the party started and bake your moist, tasty cakes. How to make Jamaican rum cupcakes:
Your favorite cake base recipe plus
Preheat oven to 350, Line cupcake pan with paper cups
Prepare the cake base as directed adding one extra egg, the vanilla and the nutmeg.
Add the rum soaked fruit, do not over mix.
Fill the cups 2/3 of the way and bake 14-17 min or until a toothpick inserted in the center comes out almost completely clean. While warm, you can drizzle on a little more rum to each cup cake if you really want to give it that extra oomph.
Add your favorite icing when cooled. Share with family, friends and co-workers if you can :).
